纯素. Marble cake
1. Preheat the oven to 180C / 160 fan. Grease the loaf tin and line with a baking parchment
2. Place the cocoa powder and the boiling water in a large bowl and whisk to make a smooth paste
3. Blitz the silken tofu, milk, vanilla extract and vinegar with a blender until smooth
4. Place the plain flour, cornflour, baking powder, bicarbonate of soda, salt and sugar in a large bowl and whisk to combine
5. Add the melted butter and oil to (4) and stir until no dry patches remain
6. Gradually whisk (3) into (5) to form a smooth batter
7. Measure 500g of the batter (just under half) into the cocoa mixture (2) and stir until smooth
8. Spoon 1/3 of one of the colours into the tin and 1/3 of the other colour on top. Repeat this two more times
9. Drag a skewer/knife through the batter a couple of times to swirl the colours together
10. Bake for 60-75 mins
11. Leave the cake to cool in the tin for 20 mins then gently turn it out and leave to cool completely before slicing
