Unsalted Butter | 2 tablespoons |
Masala powder | 1 teaspoon |
Cilantro, chopped | 1/3 cup |

Cut all materials into corresponding shapes
Melt butter, add garlic, sliced leeks and onion.
Add one tomato, and stir from time to time, until the vegetables are very soft but have not colored.
Add the potatoes, eggplant, coriander (finely chopped), ginger, salt, masala powder and continue stir for 3mins.
Add into 1/2 cup water, boil then mix the broccoli and another tomato, reduce fire to mid-low, covered, 8-10 mins.
Uncover and stir, mashing lightly, cook until slightly dry, 4-5 mins
Stir in cilantro and served with rice or bread. Enjoy:)
