猪肘去毛,洗净,剁成块.
花椒,干辣椒片准备好(如果是干辣椒,请剁成段).
葱切葱花,姜切片,蒜切片.
猪肘过沸水,去血水.
撇去浮沫,捞出,沥干水分,备用.
锅内放适量油,小火,倒入白砂糖.
慢慢炒至白砂糖融化.
倒入猪肘,翻炒至糖色均匀.
加入葱姜蒜,翻炒.
加适量的水,放入香叶,八角,生抽调味,老抽调色.大火烧开,盖盖,转小火焖1个小时.
开盖,大火收汁.
盛盘.
锅内放适量油,油热,放入花椒和干辣椒片爆香.
浇在猪肘上面.
一盘好吃又好看,辣香四溢的香辣猪肘就做好了.
