用料  

eggplants 茄子
minced pork 肉末
garlic 蒜
green onion 葱
soy sauce 生抽
salt 盐
sugar 糖
chili oil 老干妈
cornstarch 生粉
water 水
oil 油
sliced ginger 姜丝

  1. clean the eggplants and cut thier heads and tails.(洗净茄子,去头去尾)then cut.it to 4cm wide pieces.(切成厚4cm的块)shred the ginger.(姜切丝)mash garlic and green onion.(蒜和葱切末)

  2. cut vertical and horizontal lines on 1 side of the eggplant pieces and make them checkers.(用刀在茄墩一面切格子)lines preferably cut into 1/2 of death(深度为1/2的茄子)
    heat the pan with oil.pan-fry eggplant pieces until both side golden then take out for further use(锅内烧热油,煎茄子至两面金黄,取出备用)

  3. keep the oil heat.put in minced pork and pan-fry until it is cooked.(油锅烧热,加入肉末翻炒至熟)add green onion,ginger,garlic,salt,soy sauce,sugar and chili oil.mix well and add water.keep pan-frying until flavor can be smelled.take out and put on plate(加入葱末,姜丝,蒜末,盐,生抽,糖和老干妈翻炒均匀后加水,炒出香味后铺在盘子上)

  4. put pan-fried eggplant pieces on minced pork.(把茄子铺在肉末上)put the whole dish in stream pot.(整个碟子放入蒸锅)pour minced pork juice on eggplant.(把炒肉末的汁淋在茄子上)cover the pot and steam for 10-15minutes. (盖上盖子蒸10-15分钟)

  5. put steamed eggplant on plate and cover it with minced pork.(将蒸熟的茄子放在盘子上,将肉末盖子茄子上)
    add soy sauce,sugar,chili oil,salt,water and cornstarch to a heated pan.after the sauce is made,pour it on eggplant and garnish with green onion pieces.(热锅下生抽,糖,老干妈,盐,水和淀粉烧开后浇在茄子上,撒上葱末)
