zucchini | 4 large |
cherry tomatoes | 1 pint |
red onion | 1 large |
Garlic | 4 cloves |
olive oil | 2 tsp |
Fresh basil | 1/2 cup |
Salt | To taste |
Black or white pepper | To taste |
Mince garlic. Thinly slice onion. Half cherry tomatoes.
Chop fresh basil. Leave a few for garnish.
Spiralize zucchini.
Warming olive oil in a large pot over low to medium heat. Add the onion and garlic and cook for 3 minutes.
Add zucchini noodles to the pot and season them with salt & pepper. Cover the pot with a lid and allow to cook for 4 minutes, stirring halfway through.
Add the tomatoes and cook for another 4 minutes, stirring every 30 seconds or so.
Add the fresh basil to the pot then stir together. Divide the pasta onto separate plates and garnish with fresh basil. Serve warm and enjoy!
