Uyghur chicken stir fry的做法  

  1. Heat up oil with sugar till it’s brown; add in chicken and sauté for 5 mins.

  2. Add chili oil, anise, pepper corns, dried chili peppers, sauté for 1 min.

  3. Add scallion/ onion, ginger, garlic, and chili pepper powder.

  4. Add beer to loosen the texture of chicken. Add salt, sugar, and broth/ water till it merely covers all the ingredients. Add in potatoes and soy sauce. Stay on high heat till it bubbles, then turn to medium heat to simmer.

  5. Turn to high heat and add in bell pepper and hatch pepper for a short time till it’s not raw any more. Add in scallion/onion and minced garlic. Add in a splash of vinegar.
