1. 将咖啡泡好,放凉,苦度自己调整,我调到了espresso的苦度;
Make the coffee and cool it. Adjust the bitterness to espresso.
2. 将鸡蛋蛋黄、蛋清分离,分别放入两个无油无水的盆子中;
Separate the egg yolks and whites and place them in two bowls without oil or water.
3. 蛋黄中放入25g糖,用电动打蛋器将蛋黄打至蓬松并且颜色变淡发白的状态;
Add 25g sugar to the egg yolks. Whip it with an electric whisk until it becomes fluffy and pale.
4. 将软化的250g马斯卡彭奶酪分3次加入蛋黄中,每次都要用电动打蛋器搅打至无颗粒状态;
Add 250g softened muscarpone cheese to the yolks 3 times separately, each time whip with an electric whisk until grainless.
5. 将电动打蛋器洗净擦干,打发蛋清,将蛋清打到翻转盆子不会掉下的状态(湿性、干性打发都行,个人偏爱干性打发);
Wash and dry the electric whisk. Use it to whip the egg whites until stiff.
6. 分2次将打发蛋清加入奶酪蛋黄液,混合均匀;
Add the whipped egg whites to the cheese yolk mixture and mix well.
7. 加入3勺朗姆酒,继续混合均匀。提拉米苏的奶酪液部分就做好了;
Add 3 spoons of rum and mix well. This is the cheese mixture for tiramisu.
8. 在冷却的咖啡中加入朗姆酒,咖啡和朗姆的比例2:1,不喜欢过重的酒味可以少放一些,这就是咖啡酒部分;
Add rum to the chilled coffee in a 2:1 ratio of coffee to rum. If you don't like heavy liquor flavor, reduce the rum. This is the coffee rum mixture.
9. 将拇指饼干快速蘸一圈咖啡酒,铺在器皿中;
Quickly dip the ladyfingers in the coffee rum mixture, place them on the bottom of the container.
10. 在拇指饼干层上铺一层奶酪液;
Put the cheese mixture on the layer of ladyfingers.
11. 像这样叠加;
Create layers like this.
12. 放入冰箱冷藏至少4小时;
Refrigerate for at least 4 hours.
13. 食用前撒上一层可可粉即可;
Sprinkle with cocoa powder before eating.
14. 可以用勺子直接食用,也可以向这样切成小块。
