this makes 2 hearth bread (only 1 yolk)
bread flour 190 g
pastry flour 60 g = 50 g all purpose + 10 g corn starch
yeast 2.5 g
milk 180 g (used 150 g, a bit too sticky)
sugar 19 g
salt 5 g
yolk 25 g --- I used 1 yolk
butter 20 g

用料  

this makes 2
yolk 1
softened butter

milk hearth bread的做法  

  1. mix

  2. proof 1 hour

  3. divide and do a 3-fold, rest 20 - 30 mins

  4. roll into a sheet and roll up into a football shape

  5. rest for 1 hour, till pressing on it and it slowly bounce back with a light dent left; then score
    (summer for 30 mins)

  6. bake at 410F for 20 - 25 mins
    - 8/10/2024: bake at 365F*14 mins + 410F * 6 mins
