用料  

eggplant (茄子)
dark soy sauce(酱油)
Sichuan pepper(花椒)
tomato(番茄)
green bell pepper(青椒)
cornstarch water(水淀粉)
garlic(蒜头)
green onion(葱)
salt(盐)
vinegar(醋)

SOY-BRAISED Eggplant 红烧茄子的做法  

  1. cleanthe eggplants and tomato.cut them to pieces.(洗干净茄子和番茄,切块) cut green onion to pieces and green bell pepper to silces.(葱切段,青椒切片)mash the garlic(蒜切成末)

  2. put the eggplants in pot with oil,fry until golden (把茄子入油锅,炸至金黄色)

  3. take out(取出备用)

  4. mix well dark say sauce,vinegar,sugar,salt and cornstarch water to make sauce.(将酱油,醋,盐和水淀粉融合做成酱汁)

  5. put sichuan pepper and mashed garlic in pot with oil and keep pan-frying until flavor can be smelled.Add tomato to saute. add fried eggplants andsaute quickly.(爆香花椒和蒜末,加入番茄翻炒,再加入炸好的茄子快速翻炒)

  6. pour in sauce,keep pan-fry.(倒入酱汁,翻炒)turn to high heat and make it thickened.(大火收汁) put in sliced green bell pepper and stir(加入青椒片,翻炒均匀即可)
