bread flour 454g
sugar 40g
salt 8g
instant yeast 6.2g
cinnamon 4.5g
egg 1
butter / shortening/ vege oil 28g
full cream milk 113g
water 170g
raisins 255g
walnuts 113g

肉桂面包的做法  

  1. mix all dry ingredient expect raisins and walnuts. add all liquids. mix together.

  2. knead the dough  for 10mins by hand. add raisins and walnuts.

  3. ferment for 2 hours until double in size

  4. portion. devide  into 2 pieces. rounding and rest for 15mins.

  5. shaping into oblong .

  6. Proofing for 60-90 mins.

  7. sifting flour on top of the bread and scoring.

  8. baking at 177 celsius for 20 mins.
