🔸Confit: 用新鲜水果,糖,柠檬汁,柠檬皮+玉米淀粉熬煮的整颗果酱。
Confit 油封/油浸,是保存食物的一种方法。在低温度75°C~100°C熬煮或烘烤,比起油炸160-230°C , Confit这种做法更健康,更原汁原味。可用鸭、鹅、茄子、大蒜、西红柿、水果、三文鱼等来制作Confit。

🔸compote源自法国,水果用糖熬煮,并添加香草、柠檬皮屑、杏仁粉、椰子碎、糖浸水果或葡萄干等增加风味的果酱:Whole fruits are cooked in water with sugar and spices. The syrup may be seasoned with vanilla, lemon or orange peel, cinnamon sticks or powder, cloves, ground almonds, grated coconut, candied fruit, or raisins. The compote is served either warm or cold.
🔸marzipan: 杏仁膏是由杏仁、糖和鸡蛋制成的面团,它柔软细腻、气味香醇,是制作西点的高级原料,可用于烘焙、捏制有趣造型、蛋糕面装饰或甜品内馅。由于非常细滑而且可塑性很强,比翻糖方便操作,但因为含油量高所以在操作时尽量避免反复长时间揉搓。杏仁膏还可用于stollen 史多伦or banket面包卷的馅料,或者狂欢节的Tortell,国王饼。
