做法不同,在家突然想吃

味道当然不是正宗的
但很香很美味可以解解思念云南的馋
I'm currently eating rice noodles while listening to Mr. Cai Lan's audio program. I forgot which book I found out about this gourmet from, but since then I've been reading his books with great interest. Whether he is a talented person or not is not important, but he is definitely a foodie who understands the joys of life and knows how to eat, play, chat, and flirt. Living a good life, isn't it wonderful? What is the connection between him and Xiaoguo Rice Noodles? Well, there is no connection, it's just that when I thought about using lard, this person came to mind.
When I traveled to Yunnan in January, I ate a lot of local Xiaoguo Rice Noodles. The taste of each place was different, but I really liked eating them. Rice noodles are a specialty snack in many places, with different cooking methods. Suddenly, I wanted to eat it at home, so I tried to make it myself. Of course, the taste is not authentic, but it is fragrant and delicious, which can satisfy my craving for Yunnan.

备食材:米线提前泡发好沥水备用,韭菜切断,瘦鲜肉剁成碎末,腌菜(没买到地道的,就用的雪菜+榨菜凑合哈,只要是用心做食物会好吃哒!)
Preparation: Soak the rice noodles in advance, drain and set aside. Cut the chives into pieces. Chop the lean fresh meat into minced meat. For the pickled vegetables (if authentic ones are not available, I used a combination of snow vegetables and pickled mustard stems), as long as you put your heart into making the food, it will be delicious!

关键的来喽:先用肥肉熬出猪油,取出油渣,总之用猪油会很香!然后加入适量的热水煮开后加入肉碎末边煮边搅拌,再倒入一勺老抽+一勺蚝油,中大火搅拌均匀煮沸,继续再加入米线煮(全程都不需要盖锅盖)
First, use fatty meat to extract lard. Remove the impurities from the lard. In summary, using lard will make it very fragrant! Then, add an appropriate amount of hot water and bring it to a boil. Add minced meat while stirring continuously. Then, add a tablespoon of dark soy sauce and a tablespoon of oyster sauce. Stir well and continue to boil. Finally, add rice noodles and continue cooking without covering the pot.

米线煮5分钟左右(喜欢糯一点口感的可以多煮一会儿),最后放入腌菜和韭菜煮2分钟左右即可。
Boil the rice noodles for about 5 minutes (if you prefer a chewier texture, you can cook them for a little longer). Finally, add the pickled vegetables and chives and cook for about 2 minutes.
