Wholemeal starter   
Water 90g
Dry Yeast 1g
Wholemeal flour 90g

Main Dough
bread Flour 184g --- i used all purpose
Sugar 6g
Salt 3g
Milk 83g
Egg 26g --- i used 1 egg white
butter 6g
dry yeast 1g

Baking temperature :
convection oven 165℃ 10mins
traditional Oven 185℃ 12mins

用料  

starter
dough
softened butter 6 g

english muffin的做法  

  1. make a starter (could be the night before)

  2. mix

  3. rest 30 mins in fridge, then fold into a ball and rest in room temp for 30 mins (till it doesn't bound back up)

  4. divide into 6 parts, ball up each

  5. rest for 1 hour (till bounce up slowly with a light dent after pressing)

  6. bake at convection 165C for 10 mins. = 185C/365F traditional for 12 mins
    - 8/10/2024: 365F for 12 mins
