make a starter (could be the night before)
mix
rest 30 mins in fridge, then fold into a ball and rest in room temp for 30 mins (till it doesn't bound back up)
divide into 6 parts, ball up each
rest for 1 hour (till bounce up slowly with a light dent after pressing)
bake at convection 165C for 10 mins. = 185C/365F traditional for 12 mins
