做豇豆肉卤:五花肉切成小丁,倒入少许料酒和淀粉抓匀备用,豇豆切碎,蒜三瓣切片
锅内注入水烧热后倒入豇豆丁,调入半茶匙盐,沸腾后捞出冲冷水沥干备用
炒锅内倒入油,爆香蒜片后倒入肉丁划炒至变色后烹入1/4茶匙十三香和一茶匙老抽上色
倒入焯水后的豇豆丁,大火继续翻炒后放入一茶匙魔厨高汤和约三茶匙豆瓣酱,翻炒一分钟后注入沸水,没过食材即可
转中小火15分钟后调入少许盐和水淀粉即可
做家常手擀面:高筋面粉250g,用冷水和成面团后松弛15分钟
面案洒上面粉,把面团擀成薄厚均匀的大面片
两边向中间卷起,边卷边洒面粉以防粘连,切成约1cm宽的条状后手沾少许面粉将其抖匀
锅内烧热水,沸腾入滴入少许食用油,将擀好的面条下锅,点水两次后熄火,过冷水一次即可
